Quicky chicky soup for sickys

More than just comfort food, chicken soup is packed with immune-boosting benefits! Bone broth provides collagen and minerals for gut health, while garlic, onions, and herbs offer antibacterial and antiviral properties. Plus, the warmth helps soothe sore throats and clear congestion naturally. A timeless remedy for body and soul!
This is a really quick and easy soup to make for when you are feeling sick and need nourishment but don’t have much energy and can’t be bothered standing over the stove for hours.
This soup is warming, zesty, nourishing and not too heavy, so it is great when you’re feeling sick and don’t have much of an appetite.
It’s also really delicious and is great for a tasty light meal, even if you aren’t feeling sick.

Ingredients:
1kg chicken thighs
1 whole bulb of garlic
1 large knob of ginger
1 brown onion
1/2 bunch of coriander
2 bunches of choy sum
4 tablespoons of beef bone broth concentrate (I like the stock merchant bone broth concentrate)
1 heaped tablespoon of vegetable stock powder
1-2 chillies (optional)

Prepping the ingredients:
⁕ Wash the coriander and Choy sum
⁕ Dice the onion into small pieces
⁕ Divide the coriander into leaves and stalks + roots.
⁕ Finely chop the stalks and roots of coriander and put the leaves aside for later
⁕ Peel and grate the ginger
⁕ Gently crush and peel the garlic - Let the garlic sit for at least 10 minutes before chopping roughly (This allows alliin to convert to allicin thanks to the enzyme alliinase.).
⁕ Roughly chop chillies
⁕ Roughly chop the chicken breasts to largeish bite sized chunks
⁕ Boil 4-5 litres of water

Method:
⁕ Prep all ingredients
⁕ Fry onion in a very large pot until starting to clear
⁕ Add the ginger and coriander roots & stalks and fry until starting to soften
⁕ Add the chicken and garlic
⁕ Add the bone broth concentrate
⁕ Cover with boiling water
⁕ Add the stock powder and chillies
⁕ Cook with the lid on for 40 minutes on a medium heat (it should be gently simmering)
⁕ While you wait, seperate the stalks and leaves of the choy sum
⁕ Chop the choy sum stalks into medium bite sized pieces
⁕ Add the choy sum stalks after the soup has cooked for 40 minutes.
⁕ Roughly chop the choy sum leaves and coriander
⁕ Add the choy sum leaves and coriander 5 minutes before serving.

Additions for the soup.
If you are cooking the soup for enjoyment rather than because you are sick and can’t be bothered cooking you can add more ingredients to beef it up a bit
⁕ You can cook noodles separately and add them to your bowls before serving. Personally I LOVE sweet potato noodles in this soup. Although you could use any noodle of your choice.
⁕ You could add chopped waxy potatoes such as a desiree potato at the beginning when you add chicken and garlic.
